What You’ll Need
- 250g pasta (penne or fettuccine work great)
- 1 cup pumpkin purée (store-bought or mashed roast pumpkin)
- 1 clove garlic, minced
- ½ cup cream (or cooking cream)
- ¼ cup grated parmesan
- 1 tbsp olive oil
- Salt & pepper to taste
- Optional extras: chilli flakes, crispy bacon bits, spinach, or sage
How to Make It
- Cook pasta according to packet instructions. Reserve ½ cup of pasta water before draining.
- In the same pot, heat olive oil over low–medium heat. Add garlic and sauté for 30 seconds until fragrant.
- Stir in pumpkin purée and cream. Let it gently warm through.
- Add cooked pasta back into the pot, along with a splash of reserved pasta water to loosen the sauce.
- Stir through parmesan, season with salt and pepper, and add any optional extras.
- Serve warm and enjoy immediately.
